No Sugar Strawberry Baked Oatmeal

Strawberry baked oatmeal with no added sugar is a healthy start to the day for you and your little one! Filled with nutritious ingredients like yogurt, chia seeds and fresh strawberries, this high protein oatmeal bake is great for baby led weaning and toddlers.

Ingredients

  • 1 large egg
  • 1/4 cup plain Greek yogurt
  • 1/2 cup + 2 tbsp milk
  • 1 tsp vanilla extract
  • 1 cup rolled oats, certified gluten-free if necessary
  • 1 tbsp chia seeds
  • 3/4 cup chopped strawberries

Instructions

  1. Heat oven to 375°F. Line a loaf pan or other small baking dish with parchment paper.
  2. In a large bowl, whisk the egg, yogurt, milk and vanilla until well combined. 
  3. Stir in the oats and chia seeds. 
  4. Stir in the chopped strawberries. 
  5. Spread the mixture into the prepared pan. 
  6. Bake for 20 minutes, or until the center is set. 
  7. Remove from the oven and allow to cool in the pan for 5-10 minutes before removing or cutting.

Notes

  • Make sure to use in-season berries for the best taste. If using frozen berries, thaw, drain and chop them before using.
  • Chop strawberries into small pieces, no larger than 1/4 inch for babies. Measure after chopping.
  • Chia seeds are optional and can be swapped with ground flaxseed or just left out. 
  • Regular plain yogurt can be used in place of Greek style yogurt.
  • If you want a sweeter oatmeal for older children and adults, feel free to add 2 tbsp maple syrup or honey with the wet ingredients. 
  • This recipe is easily doubled for a 8- or 9-inch baking dish.
