Baby Cottage Cheese Oatmeal Pancakes

These baby cottage cheese pancakes made with oats are great for babies and toddlers! They're a healthy start to the day with lots of protein and no added sugar. (gluten-free)

Ingredients

  • 1/2 cup cottage cheese
  • 1/2 cup rolled oats
  • juice of 1/2 lemon
  • 1 large egg
  • 1/2 tsp baking powder
  • 1 tbsp butter or oil, for cooking

Instructions

  1. Add cottage cheese, oats, lemon juice, egg and baking powder to a food processor or blender. Blend until smooth.
  2. Heat a skillet or griddle over medium heat (about 350°F). Add butter enough butter or oil to coat the bottom.
  3. Pour about 1 tbsp of batter per pancake on the hot skillet. Cook about 3 minutes, or until the edges start to dry.
  4. Flip pancakes and continue cooking until done, about 1-2 more minutes.
  5. Repeat until all the batter is used. Cool pancakes before serving to baby.

Notes

  • Feel free to add other flavorings, such as cinnamon or vanilla extract, when blending the ingredients.
  • Store leftovers in the refrigerator in an airtight container for up to 4 days.
