These baby pancakes are easy to whip up with a blender or food processor and just a few wholesome ingredients. Made with protein-rich cottage cheese, fiber-filled oats and no added sugar, they're healthy and delicious.
What You'll Need
- Cottage cheese - Use a large curd, moist cottage cheese
- Oatmeal - Rolled oats (also called old fashioned oats)
- Lemon juice - freshly squeezed!
- Egg
- Baking powder
- Butter or oil for cooking

How To Make Them

- Blend the cottage cheese, oats, lemon juice, egg and baking powder in a food processor or blender until smooth.
- Melt butter or oil in a skillet over medium low heat (about 350°F).
- Pour about 1 tablespoon of batter in the skillet per pancake.
- Cook for about 3 minutes, or until the edges are slightly dry. Flip and cook an additional 1-2 minutes, or until pancakes are cooked through.
Recipe Variations
- Feel free to add any spices or flavorings to the batter when blending, such as cinnamon or vanilla extract.

- ½ cup cottage cheese
- ½ cup rolled oats
- juice of ½ lemon
- 1 large egg
- ½ tsp baking powder
- 1 tbsp butter or oil, for cooking
Instructions
- Add cottage cheese, oats, lemon juice, egg and baking powder to a food processor or blender. Blend until smooth.
