Peanut butter cottage cheese with no added sugar is the perfect high protein snack for little ones. Use it as a dip for fruit, spread onto pancakes, or scoop it up with a spoon for a delicious and nutritious snack or breakfast.

Ingredients

Units Scale
  • 1/2 cup cottage cheese
  • 3 tbsp natural peanut butter (the runny kind)
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 medjool date or prune (or 2 smaller dates)

Instructions

  1. If your dates are dry, soak them in hot water for about 10 minutes to soften, then drain.
  2. Add all ingredients to the bowl of a food processor.
  3. Blend until smooth, stopping to scrape down the sides with a silicone spatula as needed.
  4. If you have the time, let the peanut butter cottage cheese rest in the refrigerator for 30 minutes or more to let the flavors blend.

Equipment

Notes

  • Store peanut butter cottage cheese dip in an airtight container in the refrigerator for up to 4 days.
  • If your little ones are older (2 years +) feel free to swap the date/prune for a small drizzle of honey or maple syrup.
  • I like a mini food processor for smaller batch recipes like this. If all you have is a large one, you may need to double the recipe to give the food processor something to 'grab' while blending.
