Baby Pumpkin Overnight Oats
It's not quite fall until you've had a cozy pumpkin-themed breakfast is it? These overnight oats are a great way to introduce your little one to pumpkin spice in the form of a healthy, make ahead breakfast! They are filled with the warm spices of fall, but are still cool, creamy and require zero cooking - perfect for early fall in Texas where it's still hot through October!
Sweetened only with fruit and packed with pumpkin and oatmeal, these overnight oats are nutrient-dense and easy to make allergen-free, if you've got an allergy baby like me. They are also tasty enough that older kiddos (and/or mom) will want to eat them, too. Simply double the recipe to feed more people for more days. One easy breakfast that everyone can eat? That's a morning win!

Ingredients
- Pumpkin puree - Look for 100% pure pumpkin in the can, or make your own!
- Applesauce - Unsweetened applesauce adds a hint of sweetness without added sugar.
- Milk - Cow's milk is the most nutrient rich and highest in protein, but for allergies use the milk that suits you best.
- Oats - Rolled oats (old fashioned oats) give you the best texture. Use certified gluten-free oats if necessary.
- Spices - pumpkin pie spice + cinnamon
- Flaxseed- I like to add ground flaxseed for more fiber and healthy fats, but it's completely optional!

- Whisk the wet ingredients (pumpkin, applesauce and milk) together until smooth.
- Add the dry ingredients (spices, oats and flaxseed) and whisk again.
- Cover and refrigerate overnight.
- Give it all a stir in the morning, adding more milk if needed.
Tips and Recipe Variations
- Gluten-free: Use certified GF oats.
- Dairy Free: Use your favorite non-dairy milk.
- Swap applesauce with mashed banana.
- Swap pumpkin with mashed sweet potato or butternut squash.
- Sweeter oatmeal: Add 1-2 tablespoon maple syrup or brown sugar with the wet ingredients, or drizzle with maple syrup just before serving.
- Warm overnight oats: Heat in the microwave in 30 second intervals, stirring in between each, or warm over low heat on the stovetop.

How To Serve Overnight Oats To Babies 6 Months and Up
For bay led weaning babies 6 months and up, either give to baby on a pre-loaded spoon, or just place the oatmeal in a bowl and allow baby to scoop up with his hands a get messy! Overnight oats are also great for spoon fed babies in the lumpy puree stage and beyond.
I like to serve overnight oats with a scoop of plain Greek yogurt and a sprinkle of crushed pumpkin seeds on top for extra protein.

Ingredients
- ½ cup pumpkin puree
- ½ cup unsweetened
- ¾ cup milk of choice
- 1 tsp pumpkin pie spice
- ½ tsp cinnamon
- 1 cup rolled oats
- 2 tbsp ground flaxseed (optional)
Instructions
- In a large mason jar or other container with a lid, whisk the pumpkin puree, applesauce, and milk until smooth.
- Add the remaining ingredients (pumpkin pie spice, cinnamon, oats and flaxseed) and whisk until well combined.
- Cover and refrigerate overnight, or for at least 6 hours.
- In the morning, give it all a stir and thin with additional milk, if needed. If you like, top with plain Greek yogurt, finely chopped pumpkin seeds, or a drizzle of maple syrup.
Notes
These aren't super sweet. If you want extra sweetness, add 1-2 tablespoon pure maple syrup or brown sugar with the wet ingredients.
If you like your overnight oats warm, heat them in the microwave in 30-second intervals until warmed through, or heat over low heat on the stovetop.
Allergy notes and ingredient swaps:
Gluten-free: Make sure you're using certified GF oats.
Dairy-free: Use your favorite non-dairy milk.
Applesauce: Substitute mashed banana.
Pumpkin: Use mashed sweet potato or butternut squash instead.
Flaxseed: Use chia seeds (no need to grind them) or simply omit them.
